Grilled eggplant is delicious and so easy to prepare. Wash one medium eggplant and cut into 1/8 inch slices. Fire up a grill pan and spray with cooking oil – I like canola oil. Season the eggplant with salt & pepper and and put it on the hot grill. I use a grill pan on my gas stove turned to high. After a few minutes turn the heat down and turn the eggplant until cooked, about 4 minutes on each side. To serve sprinkle with smoked paprika and chopped basil.
