Holiday Brie

FullSizeRenderThis is a simple, elegant way to serve brie during the holidays . With the red, white and green theme you’ve got a perfect dish for a holiday party. I’ve been making this dish for years and I’m happy to share. My beautiful friend Martha http://www.marthalouisehunter.com/ has asked me to present a couple of holiday appetizers on her radio show Wednesdays at 6pm on http://Koop.org  and this will be one of them. HOLIDAY BRIE

  • 3/4 lb of brie
  • 1 clove of garlic
  • 1/2 cup of sun-dried tomatoes
  • 1/4 cup of parmesan cheese
  • 1/4 olive oil
  • about 10 basil leaves – save the rest for garnish
  • 1/4 cup of pine nuts (roasted or toasted) I use a small skillet over low heat

Cut off the top of a nice piece of brie. Into a mini Cuisenart add garlic and pulse, then add the sun-dried tomatoes, olive oil, Parmesan cheese and finally the basil. Mix the pine nuts into the mixture and add salt and pepper if desired. At this point you may want to add a little more olive oil to the paste. Spread on the brie, garnish with basil and enjoy!
