These little pizzas are so easy and delicious. We have been eating meatless dinners about twice a week and this is one of the best ways to do that. This is a great entree with a salad for weeknights or an appetizer anytime.
- 1 medium eggplant, peeled and sliced
- 1 large tomato, sliced
- 1 lb of good mozzarella
- oregano
- salt
- pepper
- olive oil
Preheat the oven to 400 degrees
Season the eggplant with salt, pepper and oregano
Place the eggplant on parchment paper sprayed with cooking spray
Top with the tomato slices and mozzarella
Bake for about 15 minutes or until the cheese is melted
